About the Program

Lebensmittelchemie (Food Chemistry) is an interdisciplinary research field combining various scientific areas (Chemistry, Biology, Medicine (Toxicology, Physiology), Nutrition Sciences, Food Technology, and Food Law). Food chemists evaluate the quality and safety of food, cosmetics, consumer goods, and animal feed against legal, physiological, and commercial backgrounds. A key aspect is qualitative and quantitative analysis using modern instrumental and molecular biological methods. The development of new sophisticated analytical methods is another area of focus. Additionally, researching the bioactivity of food ingredients in the human body plays an increasingly important role. The Bachelor's program provides basic knowledge in biology, mathematics, and physics, as well as solid knowledge in chemistry. From the fourth semester onwards, the study focuses on the composition, production, evaluation, and quality assurance of food. The Master's program builds on this foundation with more specialized knowledge.
